This is for all the non-pecan-loving people out there...
...a melt in your mouth, slightly sweet, nutty cookie. Just right for a pick-me-up snack.
Almond Sandies

1 cup soft butter
1/2 up brown sugar
1.5 tsp vanilla
1/4 tsp salt
1 cup almonds, finely chopped/ground
2 1/4 cups flour
1/3 cup additional brown sugar (for tops of cookies, if desired)
1. Preheat oven to 325. In a small bowl, combine flour, salt and almonds in a small bowl.
2. In another bowl, cream the butter and the 1/2 cup brown sugar. Stir in vanilla. Slowly mix in flour mixture.
3. Form dough into balls that are about 1 inch in diameter. If desired, roll in additional brown sugar. Place dough on a prepared cookie sheet (parchment paper or lightly greased) about 2 inches apart. Lightly flatten dough balls.
4. Bake at 325 for 20 minutes or until the edges are light golden brown. Cool on a wire rack.
