Many times I have passed by the recipe for Mini Elephant Ears in one of my cook books because I dislike any sort of slice and bake cookie. I don't dislike the taste; I dislike the slicing. I can't ever seem to slice cookie dough and retain the found shape. Finally, I decided--Did it really matter if the sliced cookies were round or not? Elephant ears aren't round anyways, right? I tossed some butter in the freezer and decided to make the cookies. Several interruptions and two days later I finally got around to making them.
Perfectly crispy and buttery and only a little bit sweet, they are a perfect accompaniment to a cup of coffee.
