Potato & Egg Sandwich on Homemade Italian Bread
Please bear with me as I learn to work my new gadgetry. Thank you. Meanwhile, make this delicious Italian American Sandwich! Keep it simple to make it fast and filling on a busy night or throw in some of your favorite veggies like onions, peppers or tomatoes. Around here we like it simple.
Potato & Egg Sandwich (serves 4-6)

1 lb of potatoes, peeled and sliced thin
2 cloves of garlic, peeled and smashed (no need to chop)
6 eggs
salt & pepper to taste
splash of olive oil
1 loaf of Italian bread
1. In a large frying pan, splash enough olive oil to cover the bottom. Fry the smashed garlic cloves for about 5 minutes or until golden brown. Remove cloves from the olive oil and add the potatoes. Turn frequently, frying until they are beginning to turn golden brown and crisp around the edges.
2. Meanwhile, beat the eggs and season with salt and pepper. Pour over the potatoes and cook until the eggs are set, turning as needed.
3. Slice a loaf of Italian bread lengthwise. If desired, scoop out some of the soft interior crumb. Fill with potatoes & eggs and slice into 4-6 'sandwiches.' Serve while hot.
