Why isn't there Blueberry Bread? I pondered this one day and then decided to give it a try although I can't remember ever seeing Blueberry Bread before.
Let me be a little more honest. I had planned to make cinnamon raisin bread and when I opened the cupboard I saw the bag of dried Blueberries I had purchased a few months ago. The very same bag that nearly falls out of the cupboard every time I open it. I'm pretty certain a full half of that bag was lost due to spillage on the floor and not by human consumption. Clearly those dried blueberries were itching to be eaten.
And eat them we did!
There is no need to post an actual recipe because it is a very simple substitute. Take your favorite cinnamon raisin bread recipe and replace the raisins with dried blueberries. I used 1.5 cups of dried blueberries in my dough and kneaded them in the last two minutes of kneading. Also, I omitted the cinnamon swirl in favor of putting the cinnamon directly in the dough.
My recipe yields two average sized loaves of bread. You may want to adjust the amount of dried blueberries dependent on how many loaves your recipe makes. To get the cinnamon sugar crust, combine cinnamon and sugar (about 1/4 cups worth) in your favorite proportions. Immediately after removing the loaves from their pans, brush the tops with butter and dip them in the cinnamon sugar. Allow to cool.
