Sometimes I go on eating jags and will eat the same thing multiple times a day for several days. And sometimes I will want to eat from the same food category over and over again. I'm not talking Fruits & Veggies, Grains, Proteins, Dairy and Fat. My food groups are Healthy Stuff, Bread Stuff, Coffee, Crunchy Stuff and Candy. Usually these categories are entirely independent of one another. Skittles fits only in the Candy, Perfectly Ripe bananas fits only in the Healthy Stuff and so on and on.
Until.....
I found a way to combine two of my favorite categories!!! I've been eating this bread sometimes twice a day for the last few days and our family is already on the second loaf.
That means I am combining jag eating with multiple category eating all at the same time. Double Bonus!
It's obvious one of the categories is Bread Stuff but have you guessed the other category yet? It's the Crunchy Stuff Category. This recipe I thought up is exactly how I like my sandwich bread: Soft, yet with plenty of bite to sink your teeth into with that satisfying Crunch! that I love so much. It's hearty too--this ain't no white light-as-vapor-chemical bread you find at the grocery stores. But don't let it's heartiness fool you. One thing it isn't and that's heavy.
It's full of plenty of good things: whole wheat flour, flax seeds, wheat germ, oats, honey, grits (oh yes, grits), and sunflower seeds to name a few of the good things in this bread. I also figured out just how much fiber, protein, and other vitamins were in this bread and while I won't bore you with the details let's just say that there is plenty of goodness in this bread. I've been calling it Goodness Bread because that's how I think of it.
It's good with homemade strawberry jam.
It's good with Nutella. (How do you like the unintentional plug for King Arthur Flour?? Too bad they don't sponsor me!) It's good toasted with butter. It's good with lunch meat favorites especially the plainer deli meats like turkey and ham. It adds a bit of a nuttiness to a creamy grilled cheese and it makes an excellent PBJ. I'm feeling a little 'Green Eggs and Ham-ish' right now but it's true--
