My family and I watched Back to the Future the other night. We like to try to watch a movie together at least once a week sometimes at the theatre but mostly at home. At home you get to have all the good snacks that aren't overpriced!
That way the occasional unhealthy splurge doesn't feel as guilty. Here we have Pretzel Bites with Cheese (was out of pretzel salt, used coarse sea salt instead), Gummi Worms, and Pale Brownish Lumps.
Look closer.
It's not Pale Brownish Lumps but Peanut Butter Fudge. I've been dying for some of this for over a year! I'm quite aware this may be the smallest picture I've ever put on this blog but any bigger and it blows it out to levels of blurriness you've probably never seen.
Peanut Butter Fudge
by the Combined Efforts* of Alton Brown & Michelle
1 heaping cup of creamy peanut butter
2 sticks of butter
1 teaspoon of vanilla
1 pound of SIFTED powdered sugar
1-2 tablespoons of whole milk
Prepare an 8 by 8 pan by lining it with greased wax paper.
In a bowl, combine the peanut butter and butter. Microwave on high for 2 minutes. Stir and microwave another two minutes. It will look 'puffy.' Stir in vanilla. Using electric beaters, beat in powdered sugar and milk. When the mixture is smooth, spread in pan. Cover with another sheet of waxed people and refrigerate until firm. Cut into pieces.
*Lest you think Mr. Brown and I actually worked together as in the same room at the same time compiling this recipe, what I mean to say is I tried his recipe all by myself and then altered it to suit me better**.
**Not that I think that I am more talented*** than Alton Brown.
