I don't have a lot of real readers on this blog. In fact, I *think* I could probably count my dedicated readers on two hands. That said I'm pretty sure at least half would be people I know personally and obnoxiously ask them 'haven't you been reading my blog??!!' when they ask what's new with us. Because, of course, they should all be addicted to reading blogs like I am. Right? RIGHT????
Anyhoo....I've got one of those fancy schmancy thing a ma jigs (java? applets? tartlets? huh???) that tell me how many people visit my blog every day. It even tells me what they googled to get here. Guess how most people get here?
They google 'vanilla icing.'
How about that. Poor, unsuspecting people are stumbling across my blog searching not for things like flowers, kids, mis-attempts (more about this soon) at sewing and bread but because they want a recipe for vanilla icing.
I've decided to give them what they want. Or at least one version of what they want.
Vanilla Buttercream Icing
1 stick of room temperature butter <--doesn't matter if it's salted or unsalted butter but it BETTER BE BUTTER
1.5 cups of powdered sugar <---okay, so today I had about 1.25 cups of powdered sugar so I added a few forkfuls** of granulated sugar before I added the powdered sugar.
Vanilla <--you could probably use about 1/2 tsp to 1 teaspoon of this but I hate using measuring spoons. I eyeball it and pour out what I deem to be about a teaspoon directly in the batter--no matter what I'm making.
**Yes, I said forkfuls. All my teaspoons were in the dishwasher and I just used the fork so as to avoid getting sticky fingers if i had used a few pinches. Plus, I enjoy saying 'Use the fork, Luke' in a Star Wars manner anytime I use a fork in an odd manner. (I assure you I am by no means crazy or a nutball--I just have a different sort of humor)
So, one more time without my commentary:
1 stick of room temperature butter
1.5 cups powdered sugar
1 teaspoon vanilla
In a mixer, beat butter until soft and fluffy. (This is where I added the forkfuls of sugar). Add in vanilla and powdered sugar in no real particular order but more in a slap dash sort of way. It's more fun that way. I promise you. Beat on medium high until icing takes on a smooth, creamy and light texture. Test this texture by tasting.
This recipe will frost about 12 cupcakes with less guilt. If you want a truly delicious cupcake experience, I strongly advise doubling this recipe.
